When hens start laying, their first eggs are quite small. Over a period of 4 or 5 weeks the eggs become full size. These smaller eggs are perfect for pickling in vinegar and ready to eat with the cold turkey after Christmas. Pullet eggs are also good for omelettes, scrambled, cooking or hard boiling. They are the same as a larger egg, but it would be difficult to eat one as a soft boiled egg, because the spoon would not fit!
