A very dark, concentrated, and intensely flavoured vinegar made wholly or partially from freshly crushed grape juice with all the skins, seeds and stems.
Whilst the generic term ‘balsamic’ is unregulated, Balsamic Vinegar of Modena must be aged for several years in a series of wooden barrels, and is produced exclusively in the province of Modena.
As well as using it for salad dressing, try adding a cap-full to any stew or casserole that is a little ‘dull’. Some people also swear that a little brings out the flavour of strawberries (though I haven’t actually tried this).
