Spelt is an ancient cousin of wheat with a deep nutty flavour and is more easily digested than wheat. Cob loaves are proved in wicker baskets for traditional patterned shape.
Our Spelt Loaves are made with spelt flour (a cousin of wheat) but because of the methods we use, there is a very small proportion (below 1%) of wheat flour in the loaves
