Braising steak comes from muscles on the animal that work hard, and so are not as tender as other parts. However it is relatively inexpensive and with slow cooking, becomes both tender and flavoursome.
It is presented in slices and is often seared on both sides in the frying pan to hold in the juices, before slow cooking.
