Clotted cream has a Protected Designation of Origin from the EU, like Champagne and Stilton cheese. It is made by indirectly heating unpasteurized milk and then allowing it to cool and ‘clot’. It has a distinctive yellow colouring and delicious crust on top. Minimum fat content is 55%. Perfect for your scones and jam.
