Rich, earthy beetroot makes up a quarter of this ferment, so it really makes its presence known! In a classic combo with fresh horseradish (and yes grating fresh horseradish is a labour of love) this ferment is both stunningly attractive and full of flavour. Use instead of pickled beetroot to complement a home-made burger or seriously pimp a fried egg sandwich.
