Aubergine, also known as Egg Plant, is technically a fruit. So it’s in good company when cooked with tomatoes! A spongy texture when raw becomes soft and succulent when cooked. Try roasting or griddling to bring out the smoky flavours. In times gone by it was often necessary to salt aubergine for a long time before cooking. This is not so with modern varieties as they are not so bitter.
