The Cook family have been involved in the fish industry for nearly 50 years, offering the highest quality smoked fish. The Company is still family owned and operated. It all began in 1989 when Richard bought a derelict building on the A48 Chepstow Road, renovated it, and started smoking fish for local customers. Our original South Cottage site, where processing started from, was extensively refurbished in 2014. From this plant we separately produce our Hot Smoked products; Salmon, Trout and Mackerel.
The success and quality of our products can be gauged by the fact that we supply some of the country’s top chefs and Food Courts. We can proudly list Buckingham Palace, Selfridges, Harvey Nichols, Fortnum & Mason, Harrods, The Ritz, Royal Garden Hotel, Claridges, Bibendum, and The Ivy as regular customers. We have our own vehicles delivering to The Midlands, Greater London and Heathrow Airport daily.
Our production techniques and smoking processes are still very traditional and our grading, filleting, curing and cutting is still mostly done by hand. We chip all our own Oak wood for smoking, which gives our products a unique distinctive taste. Over the past 20 years we have felled only 5 Oak trees for smoking. We have planted over 350 British deciduous trees in the Forest of Dean to offset this. The rest of our oak comes from old Whisky & Calvados barrels, which are waste products from a local sawmill.
Unlike most of our competitors, you will not find our products on supermarket or cash & carry shelves.
No waste fish – every head, skin, bone and scale is collected and sold.
No waste water – all production water and foul water is treated and reused.
No waste Polystyrene – all recycled for use in the industry.
No fossil fuels used on site to heat water or buildings: We have installed: 3 x ground source heat pumps, 2 x PV panel systems, 1 x solar thermal panel, 10 x air source heat pumps.
All waste pallets are used to fuel our biomass boiler which generates our hot water and heating. This combination of renewable technologies supplies nine houses around the site, our staff welfare accommodation, the main Smokery building and The Barn.
