Spinach and Parmesan/ Cheese Omelettes
Omelettes are So Versatile!
2 eggs
a good handful of spinach
grated parmesan
2 tbls of ricotta or cream cheese
or mozzarella if preferred
2 tbls olive oil
salt and pepper
1 tbls water
steam spinach in a saucepan with 1tbl spoon of water and a small knob of butter if preferred
beat eggs
gently heat the oil
add eggs to oil
If you are making a closed omelette, add the following ingredients to 1 half
add spinach once the egg has begun to set taking care not to burn
sprinkle parmesan on top
add the cream cheese/ ricotta or parmesan
gently fold and serve with green salad
If you are making an open omelette, sprinkle on the cheese and place under grill taking care not to burn and serve immediately
add the above all round top and place under grill
